Title: Italian Meatloaf Sandwich

  What is more homey than a
  Meatloaf sandwich-hot or
  Cold , with or without
  Sauce. Leftover slices can
  Be frozen for another time.

1cBread or cracker crumbs
1cTomato sauce, homemade or
  Canned
1 1/2lbGround beef
1 Egg, lightly beaten
1smGarlic clove, minced
2tbGrated parmesan cheese
1tsSalt
  Freshly ground pepper
1/2tsChopped basil
1/2cGrated mozzarella cheese
2tbOlive oil
1tbUnsalted butter
2lbOnions, cut into 1 inch
  Slices
2lbBell peppers,cored,seeded
  And cut into 1 inch slices
6 Italian rolls

1... Preheat the oven to 350~ F. Oil a 9x5x3 inch loaf pan.

2... In a bowl, soak the bread crumbs in 2/3 cup tomato sauce, until the sauce has been absorbed. Add beef, egg , garlic, Parmesan,salt and pepper to taste.Pack into prepared loaf pan.

3...Bake 45 minutes. Pour off drippings and spoon the remaining 1/3 c tomato sauce over the loaf. Sprinkle with mozzarella cheese, return to oven, and bake 10 minutes longer. If serving warm, let rest in pan for 10 minutes.

4... While the loaf is cooking, heat oil and butter in a large skillet. Saute the onions and peppers until just wilted. Season lightly with salt and pepper.

5... Invert meatloaf on a board and slice. Split the rolls and warm them. Arrange meatloaf slices on the rolls and top with sauteed onions and peppers. Serve immeadiately.
